Azov, Caspian and Black Seas.
Color
Pearly gray/light bluish, to very dark blue with gray notes.
Roe diameter
2 mm. on average.
Tasting
Marine and astringent, the taste finds soft iodic attributes, with some hints of anchovies and hazelnuts. Very round and very powerful, it has a solid and clean finish. For demanding palates, but also daring.
Storage
Always between 0 and 4 degrees Celsius. After opening, consume.
Serving
Consume with mother-of-pearl spoons and, if possible, a cooler. Never use metal for serving or consumption, except for the can itself.
